Isabel Balderas is more than a chef; she’s a cultural ambassador dedicated to sharing the depth and diversity of Mexican cuisine with the world. At her restaurant, Santa Catrina in Warsaw, Poland, Isabel has created a unique space where the vibrant flavors, traditions, and soul of Mexico come to life, delighting both locals and international visitors alike. Her journey from Mexico to Europe is marked by a passion for authenticity and a commitment to introducing the complexities of Mexican gastronomy to new audiences.

A culinary journey across cultures
Originally from Puebla, Mexico, Isabel brings her heritage to the table with every dish she prepares. Her culinary journey started long before Santa Catrina opened its doors. Deeply rooted in her upbringing, Isabel’s love for food was nurtured by Mexico’s rich culinary traditions, where family recipes and regional ingredients tell the stories of generations. Moving to Europe, she noticed a gap in how Mexican food was perceived, often reduced to a narrow interpretation of flavors and dishes. This inspired her to bring authentic Mexican cuisine to Warsaw and to showcase the flavors, techniques, and stories that make Mexican food so much more than tacos and tequila.
Santa Catrina: A tribute to Mexican culture
Santa Catrina is not just a restaurant—it’s an experience. Named after La Catrina, the iconic Day of the Dead figure symbolizing both the celebration of life and respect for Mexican tradition. And you can see that in the restaurant unique decoration, full of skulls and skeletons, which invites customers into a world that’s as visually striking as it is delightful. Isabel’s commitment to authenticity is evident in the design, which blends vibrant colors, traditional motifs, and contemporary elegance. But the real magic happens on the plate, where Isabel masterfully combines ingredients like fresh tomatillos, chilies, and fresh herbs to create dishes that are deeply rooted in Mexican culture.
Crafting authentic Mexican flavors in Europe
Isabel’s dishes are crafted with both reverence for tradition and a touch of innovation. Sourcing ingredients from Mexico, she ensures that her flavors remain true to her roots, while also creatively incorporating local Polish ingredients when possible. This cross-cultural blend results in a fresh take on classic Mexican dishes, offering European diners an authentic taste of Mexico with a local twist. From tortillas and rich, complex moles, to salsas with unique chiles, each dish showcases Isabel’s skill and her passion for genuine Mexican cuisine.
